Lime Honey presents itself in a quite light colouration, amber-like, in its purest varieties it's even possible to see shades of yellow and green. Like any type of honey, it naturally tends to crystallization, but it's a slower operation in the lime. Once crystallized, lime honey becomes white-ivory coloured. The taste is fresh, sweet, aromatic and sounds a lot like mountain's herbs and mint, preserving tought its intensity and persistance. It's possible to find it in less pure forms, with the presence of honeydew, chestnut, or even ailanthus, that modifies its colour and flavour.
