The Multi-flower honey can be produced as in the mountains as in hills and plains, where can be found different types of flowers. For this reason, the change of the place of harvest can affect the smell and the flavour of the honey. It can be divided in two categories depending on the period of production:
Light: Its lighter and transparent, the flavour is more delicate, sweet and less intense. It tends to crystallize after a couple of months from the harvest, and it's produced in the springtime, until June-July.
Dark: Dark or amber-coloured, it presents a more distinctive flavour, with a aftertaste more or less bitterer. It sounds a lot like honeydew and chestnut. It tends to crystallize slowly.
